Made it happen for...   
As Culinary Director at The Celtic Manor Resort, which has eight restaurants and five bars, it was imperative I achieved consistency across all the kitchen departments to ensure each dining outlet was unfailing in its delivery of five star food and service. This ethos was also applied to all high profile events, conferences, weddings and themed or special dinners. I also oversee the running of the Resort’s culinary training programme and was appointed manager of Culinary Team Wales in 2015.
 
Leading the way  
I’m very involved with the Culinary Association of Wales which promotes excellence in the art of professional cookery within Wales, something that’s extremely important if we want to attract the very best chefs and strengthen Wales' growing reputation for the quality of its food and drink products.
 
Future features  
ICC Wales will have a dedicated in house catering team, offering visitors fresh and innovative menus and concepts adding those finishing touches to compliment your event.
 
Dream job  
Wales is a country full of wonderful natural ingredients, a major factor in the recent Welsh culinary success story. I love searching for the best locally sourced home-grown produce and look forward to incorporating these into the menus at ICC Wales.
